to die for chicken!

Ok here's my before and after. I didnt truss my chicken but you can and are probably supposed to but I didnt have the string for it. It still worked.
Here is the yogurt sauce - here I added more because I could taste too much yogurt.

The to die for finished product. The skin started to come off as well as the legs falling apart it was so moist when I lifted it out of the pan. I served it with baked potatoes & we used the sauce to dip the chicken and put on the potatoes. If you try this let me know. I'd love to hear if any one else like it or not.

Morning visitors

Joel was getting ready to head out this morning for school and he saw some deer behind one of the houses across the street. We waited for a few minutes and all of a sudden they came bounding from behind the house and two by two they jumped over the fence to where the cows come to graze. Of course in this picture you see a cow he was first headed for them as if to tell them they were on his turf.

There were quite a lot of dear unfortunatly they ran the opposite direction from us so we didnt get to watch them for too long. We knew the deer were coming into our neighborhood at night because Joel and I were checking out our backyard hill and he found a rather large hoof print and the more we looked the more we found so they come into our yards to graze on our newly growing grass. I'm tempted to set up a camera just to see how many we get at night.

Signs of Spring


My little flowers are finally starting to bloom. I love seeing new flowers popping up everywhere. I can hardly wait to start working on my garden.

These little pansies suprisingly have survived the winter and have decided to get even more beautiful as the weather gets warmer. I love looking at their little faces, God is such a great artist!
A challenge for the week - make a point of finding new growth everywhere you go.

First fishing trips of the season!


This week was the beginning of Joels spring break. We decided since we were finally getting a beautiful warm weekend we'd spend it at the New River fishing. The view was beautiful and it was such a wonderful day. It was in the mid 70's with a great breeze.




Even though the weather was nice the fish were hunkered down and no one around us caught a thing.

Tuesday afternoon Joel and I decided to go out again incase it rained on Wed. so off we went after lunch. It was another great day. It started off with Joel finding a crawfish. I've never seen one alive in person. His claws were blue/green.





He's pretty big!!!






Later on we found a section that looked like a private beach so I hung out there while Joel walked out into the river near the small rapids.
While I was fishing I noticed a baby turtle trying to make it to the water. He was so cute.

He finally made it out into the river. Poor little guy had a tough job for himself.


Joel got out pretty far into the river. I saw a few slips so I had the camera ready just incase he went for a dip :) In the mean time I saw a guy in a kayak going over the small rapids. While I watched he all of a sudden just fell over into the water. I was expecting him to bounce right up but he didnt. Then I heard him yelling and waving his hands at Joel. I thought he was drowning and couldnt imagine anyone trying that without knowing how to swim. So he finally got to the calm area and kept yelling to Joel but it was pretty deep and the current was too strong so Joel couldnt get to him. Then he got to me and yelled if I had a rope which I said no. He really just wanted us to pull him in and his Kayak. He swam over to where I was standing and Joel and another fisherman came over to help him out. To our suprise the guy was in shorts and a tshirt with a life jacket. The water was freezing! We were shocked he wasnt in a wet suit. His paddle was still floating down the river and the poor guy couldnt seem to get hisself together. He finally left to go get his truck and wouldnt accept any help.


Our day ended with no fish but a lot of fun. We're hoping to get something on the next trip!

Tech game



Joel and I love going to basketball games and sure enough
some tickets became available a few days before the game. We were pretty excited.
Tech was playing UNC. It was a really good game but unfortunatly they just couldnt pull it off.

Big snow!





We finally got a good snow!




Joel and I have been waiting for a big snow all winter. We loved the snow in Colorado and were really hoping for a good one here and last night we finally got it! It started coming down so beautifully Sunday afternoon and then pretty much came to a hault around 9:00pm. We were a little bummed and that we weren't getting more but little did we know what would take place in the middle of the night.


We got up this morning to find about 8 1/2 in.
It was beatiful!!!
I could hardly wait to get out in it.
